In our Garden:

Last year we started with one raised bed and this year we've upgraded to three.  I love being able to walk right outside and get fresh ingredients to make a complete salad or yummy side dish. We've been spoiled this summer with the most delicious, crisp lettuces. The hardest part about gardening is using up all of the veggies in a timely manner. Some veggies overproduce, and this is where canning comes into play! In 2011, we learned lots about pickling and we hope to hone in on the perfect food preservation methods.

Update: The garden is hibernating for the winter! Steve puts black plastic over the beds to prevent being taken over with weeds. He has already ordered all of the seeds for the coming spring and has plans for two new beds! This year we will be adding strawberries and snow peas among other things! We got a canning book from my aunt for Christmas and plan on doing a lot more with our overabundant veggies and fruits! Stay tuned!

Fruit Trees:

We have many fruit trees on our property, one of my favorite parts about living here. With so many lemons year-round, I can make my own dressings and marinades, or just add a splash of lemon juice to fish and other meals. I also made lemonaid for 50+ people at a fundraiser. I don't recommend it!

Currently, in our fridge we have a quart of freshly pressed apple cider! Goes great with vodka ;)


This year, Steve chopped down one of the apple trees that was half dead and replaced it with a brand new apple! And he also planted a baby walnut tree!
